Layered Chicken Enchilda Casserole

green enchiladas sauce

shredded cheese

flour tortillas,

shredded chicken,

chopped green onions

sliced black olives

 

Dip the tortillas in the green sauce and layer them on the bottom of the pan, cover with chicken, cheese, green onions and black olives, and repeat until you think the pan is full enough. Usually when i make them I take 1-2 tablespoons of sauce and sprinkle it on top of each layer. Then i bake on 425 for about 45 min. or until the cheese is a light brown.

ROTISSERIE CHICKEN in a crock pot

1 whole chicken to fit your crock pot

spray olive oil

seasoned salt or any other kind of seasoning

aluminum foil

1.   Spray chicken with olive oil and sprinkle with seasoning of choice.  Do not put water into crock pot.

2.  Roll some pieces of foil into balls and put them into bottom of pot.  The chicken is going to sit on these.

3.  Put chicken breast side down on top of aluminum balls.

4.  Cook on HIGH for 4 - 6 hours.  It will not come out the same if cooked on low.

LASAGNA in a CROCK POT (slow cooker)

1 pound         Ground Beef

1 box               Lasagna noodles  (you'll only use about 8 pcs)

1 jar                 Spaghetti sauce  (approx. 16 oz.)

1  1/2 cups    Cottage cheese  (approx. 24 oz)

1  1/2 cups    Shredded Mozzarella cheese  (2 cups is fine)

2 TBSP.           Grated Parmesan cheese

Directions:

1.         Brown ground beef and drain.  

2.         Spoon 1 C. spaghetti sauce in bottom of 4 quart crock pot.  

3.         Mix remaining sauce with beef.  

4.         Break up 2 lasagna noodles and place evenly on sauce in crock pot.   Spread 1/3 meat mixture on top of noodles.  

5.         Spread 3/4 C. cottagecheese over meat.  Sprinkle 1/2 C.mozzarella cheese over cottage cheese.

6.         Add another layer of uncooked noodles, 1/3 meat mixture, the remaining cottage cheese and 1/2 C.mozzarella cheese.  

7.         Place another layer of uncooked noodles, meat mixture, and mozzarella cheese.

8.         Sprinkle Parmesan cheese over top.

9.         Cook on low for 4 hours.  If cooked much longer, it gets a bit well done.

Monkey Bread

Ingredients

3/4 Cup Sugar

2 tsp Cinnamon

1/2 Cup packed Brown Sugar

3/4 C Butter- melted 

4 cans refrigerated Biscuits (or you can make you own)

Directions:

Grease or Spray Bundt cake pan/Circle cake pan.

Mix white sugar and cinnamon in 1 gallon ziplock bag. 

Cut each biscuit into quarters. Shake quarters in bag to throughly coat.

Stack quarters on stop each other in a repetitve circle pattern in pan. 

Mix Butter and brown sugar then pour over biscuit pieces. 


Bake 40-45 mins @ 350 or until Golden Brown. 

Let Cool for 5 minuten Turn upside down onto plate and serve warm

SUGAR COATED PECANS

recipe makes 1 pound

1 egg white  (I used egg beaters egg whites)

1 tablespoon water

1 pound pecan halves

1 cup white sugar

3/4 teaspoon salt (I never add salt)

1/2 teaspoon ground cinnamon

 

Directions

1.Preheat oven to 250 degrees F (120 degrees C). Grease one baking sheet.

2.In a mixing bowl, whip together the egg white and water until frothy. In a separate bowl, mix together sugar, salt, and cinnamon.

3.Add pecans to egg whites, stir to coat the nuts evenly. Remove the nuts, and toss them in the sugar mixture until coated. Spread the nuts out on the prepared baking sheet.

4.Bake at 250 degrees F (120 degrees C) for 1 hour. Stir every 15 minutes.

 

TACO SALAD

MICHELE'S FAMOUS TACO SALAD

 

1 lb. ground beef

1 envelope taco seasoning mix

1 bag of shredded lettuce

3-4 sliced scallions

1 container of cherry/grape tomatoes cut in half

1 cup shredded cheddar cheese

1 cup or so of doritos chip crumbled

fat free Catalina salad dressing as needed

 

 

Brown ground beef in a skillet, drain fat, add taco seasoning mix and prepare as directed on package. Set aside.

In a large salad bowl combine: cut lettuce, sliced scallions, diced tomatoes, shredded cheese, seasoned ground beef, dorito chips, and salad dressing.
